Well, it's finally here! Today is day 30. I can't believe that I've actually just typed those words! It felt like this day would never happen. Today I'm just going to share a few new meal ideas, as well as my thoughts on the program, and what I'm going to do to in conclusion...so let's begin, shall we?
One of my favorite proteins that we have been making is grass-fed london broil. H and I go grocery shopping every Sunday, and we always purchase the largest london broil that is available at Earth Fare. We usually cook it on Monday nights, and I can get a good four meals out of it! Here it is with cauliflower puree, grilled asparagus, and deviled eggs made with paleo mayo. For leftover days, I would cut it up and eat it in a spinach salad- yum!
This next meal was one of my favorites. I thinly sliced a zuccini, and steamed it with sea salt to make "noodles". I ate it with turkey meatballs and fresh tomato sauce, and a side of black olives. SO SO yummy. I didn't miss pasta at all. Also, a "heaping handful" of olives is one of the suggested fats to eat with each meal, and I have been using that to my advantage. I love black olives so much...my parents still put a can in my stocking (like they have for 20+ years) when I go home for Christmas.
I also have found that the ONLY way I like sweet potatoes is to make them into fries. I've never been a fan of sweet potatoes, but I really like them baked like this.
I also discovered a life changing recipe: avocado ranch. It's made with an avocado and a can of coconut milk, along with some fresh herbs. I love it. It works as my fat for a meal, and I eat it with sweet potato fries (which feels indulgent), carrots, or broccoli.
I've also had my fair share of grass fed ground beef, served best in lettuce "tacos".
For breakfast one day, I fried an egg and a piece of proscuitto in coconut oil, and then cut a tomato into slices, stacking each layer with a piece of basil and a splash of balsamic. Reminds me of my former favorite caprese salad, but without the mozzarella. Delish!
